Eric Ripert gleefully sautes some farm-raised bluefin tuna for David Letterman.
Flogging his upcoming PBS series, Avec Eric, Le Bernardin chef Eric Ripert appeared on the David Letterman show Monday evening. In a lightning cooking demonstration, he sauteed a pair of bluefin tuna steaks. The tuna is apparently of the farm-raised variety from Australia. Way to go, Eric! (And thanks to the commentators who noted my mistake in thinking the tuna was wild.)
