Under the Toque: Jason Hall in at Gotham; Vongerichten Junior in at Perry Street


Jason Hall, the executive chef at Michael Psilakis’s Mia Dona, has allegedly left the restaurant to take over as chef de cuisine at Alfred Portale’s Gotham Bar and Grill.

It turns out that the Top Chef Masters leak a few months back that gave away the winner was accurate: Rick Bayless beat out Hubert Keller and Michael Chiarello in the show’s finale.

Jean Georges Vongerichten’s son, Cedric, is taking over the kitchen at his dad’s West Village restaurant, Perry Street. Erik Battes, who had been at the helm, will stay within the Vongerichten family of restaurants.

Justin Toth, who had been a sous-chef at Thor and later at 5 Ninth, has taken over from Kevin Pomplun as chef de cuisine at 5 Ninth. Pomplun left the restaurant a few weeks ago to start Picnick Smoked.

The name of Danny Meyer’s much anticipated new trattoria, set to open in November at the Gramercy Park Hotel, has been announced. It will be called Maialino, which means “little pig.”
