Vegetarian Delights of NYC: Russian Carrot Cutlet at Mari Vanna


Last night, at Russian newcomer Mari Vanna, if you weren’t a Russian model or a rich man known to the owner, you had to fight like a rabid jungle cat to just get what you ordered. And forget obtaining a cocktail or having your water glass filled. But that’s not to say that there weren’t bright spots, one of which was very orange: Carrot cutlets, or kotlety, which are not done justice by the slightly scary photo below.

Carrot kotlety are made by cooking carrots and a bit of semolina in milk, and then making them into patties with an egg and breadcrumbs. The version at Mari Vanna were sweet and carroty, truly vegetarian comfort food, especially with a dollop of sour cream on top.
