Fork in the Road broke the news last month that cult butcher Tom Mylan was leaving his post at Diner and Marlow & Sons (& Daughters) to strike out on his own. At the time, he said he was planning a “multi-use space.” Now, Brooklyn Based has the details: “Now that we have permits and such I guess I can finally break the silence,” says Mylan. “Me and Brent (Young, formerly of Marlow & Daughters) and Harry and Taylor from The Brooklyn Kitchen have joined forces to open a food dork megaplex on the north side of Williamsburg.”
“The Lab,” as they’ve dubbed it, will house a cooking school for home cooks, beer- and wine-making facilities, a library, and a bulk spices, grains, and legumes room. It will also feature the Meat Hook, a full-service butcher shop selling local, sustainable meat and poultry, sausages, and prepared foods.
