Mangalitsa hogs are a heritage breed of swine most commonly found in Hungary and the Balkans. They’re easily recognized by their long, curly hair, which is why they’re known more commonly as wooly pigs. But more importantly, to the dedicated pork fiend at least, they’re also classified as extreme lard-type hogs, meaning they produce a lot of very high-quality fat and marbled, juicy meat. Beginning tomorrow, Klee Brasserie will offer a three-course $58 Mangalitsa menu for one week only; the hog will be slow-cooked to maximize its extreme-type fattiness.
