Yesterday, on WNYC’s The Brian Lehrer Show, recently wedded butcher extraordinaire Tom Mylan revealed that he is a recovering vegetarian. (Of course, he’s not the only vegetarian-turned-butcher out there.) The cleaver-wielding Mylan, whose new establishment, the Meat Hook, is set to open in the next few weeks, spoke to Lehrer about cult butchers and their rising “rock star” status, driven by a greater trend toward glorifying cooks and bartenders, but also by the growing locavore movement.
“There is some value in showing people, ‘This is how an animal comes apart. These are where the cuts live. This is what a pig looks like before you go into the grocery store and get it off a little foam tray.'”
And, any thoughts on the value of tofu?
