In Addition to the Eggo Shortage, a Possible Libby’s Shortage


If being faced with an Eggo shortage weren’t enough, Thanksgiving-addled New Yorkers now must also grapple with the specter of a Libby’s canned pumpkin shortage.

Thanks to heavy rains in the Midwest, the commercial pumpkin harvest started late, and because 2008 was also a bad growing year, there are very few pumpkins stockpiled for canning purposes. While the Libby’s folks aren’t saying there will be a shortage for sure, there are plenty of ways to work around one, namely by going to the farmers market, buying a cheese or sugar pumpkin, and roasting and pureeing it in a food processor. The result is more or less the same, only thicker, more robust, and, well, better.
