Here’s a reason to put an expensive piece of technology in the way of flour or melted duck fat: Michael Ruhlman’s cookbook Ratio: The Simple Codes Behind the Craft of Everyday Cooking is about to become an iPhone app.
The application provides all of the “32 critical ratios” that Ruhlman classifies as “the backbone of the culinary arts.” As a bonus, there’s a calculator, ounces to grams converter, recipe storage, a mechanism for sharing recipes on Facebook and Twitter (if water boils outside of a social network, does it really boil?), and, perhaps most importantly, tech support.
While Ruhlman’s app enters an already crowded market for cooking-related iPhone applications, with its gee-whiz calculations, it has the potential to be one of the most useful. The home cooking world may finally have its own version of Turing Bombe, complete with pretty colors and custard icons.
