Zak Pelaccio on the Long-Delayed Opening of Fatty ‘Cue in Williamsburg

At the Saveur magazine holiday pot-luck last night, we cornered Zak Pelaccio (who contributed stewed pork to the event) and asked him the obvious question: When is Fatty ‘Cue going to open?

To his credit, Pelaccio looked only slightly nonplussed. “Even my mom and dad want to know,” he said. “First quarter 2010. By March.”

The restaurant, which will occupy three levels at 91 South 6th Street in Brooklyn, will serve a Southeast Asian spin on barbecue, like coconut-milk-soaked smoked brisket, and pork brined in Indonesian flavors. Pelaccio will be joined at the smoker by former Hill Country pitmaster Robbie Richter.
