Under the Toque: Tom Block In at Allen & Delancey; Fabien Beaufour Out at Eleven Madison Park


Petrous Maldovin, the head chef at the Russian Tea Room is being sued by his sous chef, Eric Martelle, and line cooks, Ian Payette and Sean Hannigan, for harassment. The three men claim Maldovin regularly grabbed their crotches, pinched their nipples, smacked them with pans, and boasted of sleeping with their mothers and sisters. [NY Post]

Allen & Delancey, which has already gone through four chefs since opening two years ago, has now hired Tom Block to take over the kitchen. Block has cooked at Falai and Aquavit.

Fabien Beaufour, the executive sous chef at Eleven Madison Park, will leave his position as the second in command behind chef de cuisine Daniel Humm, to pursue a “new challenge.”

Top Chef: Vegas cheftestant Eli Kirshtein is getting ready to leave Eno in Atlanta to relocate to New York City. His first gig in the Big Apple will be as a guest chef at kosher restaurant Solo, where, coincidentally, another Top Cheftestant, Hung Huynh, worked briefly last year.

Carlos Simoes is now helming the kitchen at Lucas Steakhouse in Long Island City. He formerly worked at the Meatpacking District’s Macelleria as the chef de cuisine.
