T Magazine recently noticed the proliferation of natural wine bars in major cities around the world. A few months ago, natural wine purveyor Thirst Wine Merchants in Fort Greene revealed it was planning to open a wine bar. Now, owner Michael Yarmark says the opening has been pushed back.
ThirstBar, originally expected to open at the corner of Classon and Pacific late last year or early this year, will specialize in what Yarmark likes to call “slow” wine, or wines made by small producers without the use of pesticides, herbicides, or other additives.
“We’re hoping to open in the spring,” says Yarmark.
