Recipe: Make Chef Isaac Reyes’s Pancakes With Banana Frita

Just in time for the next one, this Sunday, January 17, Chef Isaac Reyes shares his recipe for Pancakes with Banana Frita, which go perfectly with a Morir Sonando mocktail (orange-juice milkshake with cinnamon and sugar). Party on, baby.

Ideya’s Pancakes with Banana Frita

1 1/2 cup flour
1/4 cup sugar
1/4 tsp baking powder
1/4 tsp baking soda
1 cup whole milk
2 small eggs
2 tbsp fresh-squeezed OJ
1/4 tsp vanilla extract
dash ground cinnamon
2 tbsp melted butter

In a mixing bow, combine all dry ingredients. In a separate bowl, combine all the wet ingredients. Combine the two mixtures, mixing well. Whisk until there are no lumps, being careful not to over-whisk. Drop 2 ounces of batter onto a hot buttered griddle. Cook for approximately 1 minute on each side, until golden. Serve topped with banana frita (recipe follows).

Banana Frita

3 ripe bananas
3 tbsp melted butter
cinnamon, for sprinkling
granulated sugar, for sprinkling

Slice the peeled bananas lengthwise. In a pan with the melted butter, saute the bananas for 1 minute on each side, until golden but not browned. Drain the bananas on paper towels to remove excess butter. Sprinkle with cinnamon sugar.
