While there’s no further word on what, exactly, the “philosophical differences” were between Fabio Trabocchi and his former employers at the Four Seasons, there’s some indication that he’s having similar issues with the city as a whole.
Gael Greene ran an interview with Trabocchi on her Insatiable Critic site yesterday, and found that he’s thinking of moving back to D.C., where he first found acclaim at Maestro in Tysons Corner. Trabocchi, who lasted all of three months at the Four Seasons before departing abruptly last week, told Greene that he’s had “a rocky time” in New York:
‘”I need to do something sooner rather than later,” he says. “I still think of New York as a great place for chefs. But it’s been tough for me. It’s been tough on a lot of chefs. Gray Kunz had to leave. It took a long time for Paul Liebrandt to find his place.””
Trabocchi expressed a desire to return to the kind of home cooking he grew up with in Ancona, Italy. Whether he does it here or in D.C. remains open to question.
