These peel noodles, otherwise known as knife-cut noodles, were slurped at Wong Wong Noodle Shop, a Fujianese noodle spot in Sunset Park, Brooklyn. The noodles are wide, irregular, and fluttery, made by shaving strips from an oblong of dough. Here they share the bowl with roast duck, bok choy, and pickled greens.
