De Guia pays a visit to Samaki Smoked Fish in Port Jervis, where Simon Marrian, the family-run smokehouse’s president and owner, talks about what’s involved in making really good smoked fish (not much, it turns out: just some brown sugar, salt, oak smoke, a homemade brick kiln, very fresh fish, and, of course, plenty of TLC).
