Mother in Law’s Kimchi’s Lauryn Chun is not shy about pairing her fiery fermented cabbage with unexpected partners — last November, she did a wine and kimchi tasting, and tomorrow, she’ll collaborate with Anne Saxelby to pair kimchi and cheese.
In collaboration with Craft Beer, Chun and Saxelby will be serving $25 tasting plates of three kimchis and three American farmstead cheeses, which will be accompanied by three kinds of craft beer. Napa cabbage kimchi will be served alongside Pawlet cow’s milk cheese; Manchester, an aged goat’s cheese, will partner with Daikon radish kimchi; and Maytag Dairy’s blue will join forces with four-month aged Napa cabbage kimchi.
The event will take place tomorrow from 7 p.m. to 10 p.m. in the back room of craft beer haven Jimmy’s No. 43.
