Clupeophiles, rejoice! New Catch Holland herring season is nearly upon us, with less than three weeks left until the first shipment arrives at Russ & Daughters on June 8. Last year, the appetizing mecca celebrated with a herring and aquavit pairing at the Roger Smith Hotel; this year, they plan to take the festivities downtown to the Astor Center. There, on June 15, they’ll hold a herring and cocktail and spirits pairing with some help from Wylie Dufresne and John Zorn.
The “Herring Pairing” will take place from 6 to 9 p.m. and will feature herring in many guises: smoked, marinated, pickled, and salted. Dufresne’s herring dish will be paired with a cocktail from wd~50’s bar manager, Tona Palomino. Zorn will provide musical accompaniment for the consumption, which, given the manner in which New Catch herring are traditionally eaten, will be a spectacle in and of itself.
