Apparently, Americans have been committing unspeakable acts against panini by grilling and pressing them. Or at least that’s the message Michele Colombo hopes to spread far and wide with Salumè, the new Milanese sandwich shop he’s opening this Thursday in Soho. The shop will serve cured meats and what the press release claims are “the real Italian panini,” meaning they’re lightly toasted, not grilled and pressed. All of the sandwiches — there will be a rotating selection of 100 — will come sliced to order, with a mandated 2:1 ratio of filling to bread. Meats will be sliced to order on a pair of Berkels; toasts and canapes will also be available.
