Vegetarian (and Vegan) Delights of NYC: Marketa’s Eggplant Salad


Eggplants have enjoyed a long and illustrious history in the kitchens of Greece: Fried, stewed, baked, pulped, mashed, or grilled, the nightshade has made its way into many a Hellenic dish. One of the most widely recognized is melanzanosalata, a simple eggplant salad typically comprised of eggplant, olive oil, red wine vinegar, salt, pepper, and fresh herbs. The salad gets loving treatment at Marketa, the recently opened cheese and prepared foods shop from the owner of Estiatorio Milos. Available in one hefty, $6.50 portion, it’s a smoky, velvety cloud garnished with a parsley sprig, perfectly seasoned and very refreshing. Accompanied by a complimentary chunk of bread, it makes a surprisingly filling — and affordable — lunch that’s ideal for both eggplant lovers and herbivores who happen to find themselves adrift in midtown.
