Gin and Campari complement each other so beautifully, but I’ve never quite understood why Campari and grapefruit are such a popular combination — the two have such competing flavors. Herbaceous Chartreuse, a touch of sugar, and a dry gin kick help keep this drink in check, while the candied citrus rim is like a toy in a Happy Meal: You might not miss it if it weren’t there, but it is, so go ahead and enjoy it, even if it is just a distraction from the main event. And the event in question? The cocktail evokes a summer dance party, more so than the darkened back room you’re sipping it in might suggest.
