Local Caviar Purveyors React to the U.N.’s Newly Lifted Beluga Ban


Now that the U.N. has lifted its ban on beluga caviar exports from five countries, including Russia and Iran, what does that mean for local caviar purveyors like Petrossian and Russ & Daughters? According to Grub Street, not much: At Petrossian, customers are happy with caviar from farm-raised sturgeons, while at Russ & Daughters, Niki Russ Federman says that “[i]t’s still an extremely threatened species, so if I had a choice I’d rather go with delicious caviar that’s sustainable.”
