More Roof-to-Table: Gramercy Park Hotel Garden to Supply Maialino With Veggies

Bell, Book and Candle, opening soon in the West Village, isn’t the only restaurant that plans to source produce from its own rooftop garden.

A sous-chef and manager at Maialino have cultivated a garden on the roof of the Gramercy Park Hotel, where the restaurant is located.

More than 50 vegetables, fruits, and herbs are grown in the garden, and that produce will be used at Maialino and the hotel’s Roof Club. A representative notes that the irrigation system uses rainwater, the compost makes use of the hotel’s old rubber floorboards, and all the containers used (water bottles, wine boxes) have been recycled from their original use at the hotel.
