The Empire Diner went dark in May, but it looks like Chelsea won’t have to wait much longer to witness its resurrection: According to Eater, version 2.0 may open in mid-September. The restaurant, which will come from the owners of Coffee Shop, will focus on upscale, somewhat expensive American food, an original concept if ever there was one. The owners claim they won’t alter the restaurant’s existing decor, though if their hiring policy is anything like Coffee Shop’s, it’s a safe bet that the waitstaff will undergo an extensive facelift.
