Dish No. 12: Ceviche at Desnuda

​Welcome to 100 Dishes to Eat Now, Fork in the Road’s handy list of some of our favorite dishes — old standbys and new finds alike — compiled daily.

Today’s Pick: Ceviche, such as the one above with wild king salmon, oranges, sugar-bruléed sweet potatoes, red onion, and almonds at Desnuda (122 East 7th Street, 212-254-3515).

Desnuda is an oddball cevicheria, making raw fish dishes in a style the owner calls “new world,” which seems to mean that the chef does whatever occurs to him.

Most of the results are great, such as a red heap of Spanish mackerel dressed with a pungent mix of shallots, coconut, lime, and a whole lot of smoked paprika. It sounds improbable, but it’s delicious, almost reminiscent of a deli spread. And, shown above, a generous serving of silken wild salmon gets tossed with toasted almonds, red onion, oranges, and sweet potatoes. And you wouldn’t want to miss the tea-smoked oysters, which are smoked in front of you using a bong. Gimmicky, but effective!
