Here’s further evidence that the conservation-of-energy principle applies to the Danny Meyer empire: Even when a restaurant closes, it isn’t really lost; it just takes on a different form. Case in point: Two weeks after announcing Tabla‘s imminent shutter, the Union Square Hospitality Group has made public its plans to spawn another Shake Shack, this time in Connecticut.
Per a release, Shake Shack will be opening a roadside location in Westport, right off of I-95, in the second half of 2011. It will be the third planned opening for next year, along with Washington, D.C., and Battery Park City. We’re already imagining what Fairfield County-inspired concrete flavors the location will offer; chances are they’ll involve a lot of vanilla.
