Although it’s his job to eat other people’s food, Our Man Sietsema is also an excellent home cook. CHOW New York editor (and former FiTR contributor) Alex Van Buren has captured him in the act with a video that shows him making bucatini all’amatriciana in his small but well-appointed West Village kitchen. More accurately, Van Buren and her colleagues mostly captured him in the act: Sietsema, who hits 16 or 17 restaurants a week, has half of his face obscured by his customary devil’s mask. As he cooks, he talks about pasta, restaurant criticism, and restaurant hype, and generally makes us very hungry.
