Last June, Hemant Mathur talked with Sarah DiGregorio about Tulsi, the restaurant he was planning to open with his wife, pastry chef Surbhi Sahni, in Midtown. According to Grub Street, Mathur, who was the co-chef-and-owner of Devi with Suvir Saran, will open Tulsi next week at 211 East 46th Street. In addition to reprising the Manchurian cauliflower that bewitched countless diners at Devi, the chef will do a variety of regional dishes — think Kashmiri rogan josh and ker sangri, Rajasthani desert beans simmered with yogurt, mango powder, and garlic — as well as a more unexpected take on the Tibetan dumplings known as momos.
