This week, Counter Culture examines Lievito, a new pizzeria in the West Village where the pies reflect Northern Italian flavor preferences. The handsome tiled oven produces a range of pies — many with no tomato sauce — featuring fresh herbs, a mixture of cheeses, and a crust thinner and less charred than the Naples style that has dominated the city’s pizza universe for the last few years. Indeed, Lievito’s pizza are a unique product unto themselves, and there’s nothing else like them in town.
The Carita, one of the white pies that are a specialty of the restaurant, topped with cheese, nuggets of pork sausage, mushrooms, leeks, and rosemary, making for an herby fragrance.
Many of the apps at Lievito are Florentine in origin, including this sformatino — a wobbly custard of artichoke and cheese.
