Having now washed his hands of Michael White, Chris Cannon has chosen two chefs to fill the chef positions that White nominally held at Alto and Convivio. Diner’s Journal reports that Cannon has picked Terrence Gallivan, the erstwhile executive chef at August, to head the kitchen at Alto, and Giuliano Matarese, formerly of La Gazzetta/Villa Pacri, to run Convivio. Like the food served at Convivio, Matarese hails from southern Italy, and will prevent things like root vegetables from infiltrating the restaurant’s winter menu. Both chefs are expected to premiere their new menus in a month or so.
