It’s been a while since Michael Bao Huynh wedged his name into a restaurant marquee, but on Friday he’ll rectify that situation with Baotique, a modern Vietnamese boîte in Covet Lounge. And he’ll have company: According to Metromix, Pichet Ong will be along for the ride as the consulting chef.
Ong — who briefly collaborated with Huynh on Spot Dessert Bar — is working on a dessert menu that will include a “chocolate green tea volcano.” On the savory side: pig products. They will find particularly excessive expression in a dish comprising Spam, pulled pork, Chinese sausage, bacon, and pork fat. Oh, and fried rice.
