Where was I eating this week? Vandaag. The pictured open-faced sandwich (or smørrebrød, as the restaurant calls it) is topped with slightly bitter mustard greens, a touch of genever, and a healthy dose of Gouda cheese. It’s a $9 veggie-friendly yet carnivore-approved lunch (also tasty if less photogenic is the duck confit and sliced radish smørrebrød).
