At Uptown African Restaurant in the Bronx, a meal begins with a hand-washing in a pink plastic tub, to clean your mitts so you can pick up little bits of tuo zafi (mashed rice, bottom right), to dip in the pepper soup (top) and lamb soup with a leaf sauce poured on top (bottom left).

The restaurants of West African immigrants in the city — which we’d estimate at 50 in number — receive little attention from foodies and food writers, and that’s a shame, because the food is not only fascinating, but delicious, too.
