The drink: Via Vero

The ingredients: Añejo rum, pear liqueur, Carpano Antica Sweet Vermouth, and Jerry Thomas’ Own Decanter Bitters
The buzz: The Tribeca outpost of Weather Up is a more polished version of its Brooklyn sister location. The tiles from the original vaulted ceilings show up here, but in Manhattan they seem to gleam more lustrously. Oh, and there’s caviar. With ours, we enjoyed the Via Vero, translating as “the true way.” Bitter and spicy with a touch of the herbaceous, thanks to Jerry Thomas’ Own Decanters Bitters, it certainly felt like we’d taken the right path ordering it. The caramelized sweetness of the rum isn’t lost, just layered beneath sharper flavors, then boosted by the sweet-tart pear liqueur. Alongside salty caviar, you end up with a perfect patchwork of a flavor profile; a pretty, windy route to satisfaction.
