The drink: Shiro Mizu
The bar: Theater Bar (114 Franklin Street, Tribeca, 212-334-3633)
The price: $15
The ingredients: Japanese yuzu-infused tequila, with shiso leaf and wasabi-shiso salt rim.
The buzz: There’s a lot going on on Theater Bar’s ginormous (literally — it’s like a broadsheet newspaper) menu. And there’s oftentimes a lot going on in each drink. But in the Shiro Mizu, the flavors of the various ingredients come through cleanly. There’s the citrusy yuzu, the glycerin of the tequila, the floral-tea note of the shiso, the wasabi bite in the rim. And, of course, salt. If you thought salt did wonders for soup, you’d be amazed at what it can do for cocktails. It’s the best part of a margarita, isn’t it? This uncomplicated, well-balanced drink is a refreshing change from the busy-ness of the rest of the cocktail list. Sure, a matcha-tea saketini is interesting, but it’s a little on the silly side, no?
