Alex Sorenson, the opening chef at Colonie in Brooklyn Heights, has left the restaurant to open his own place. He’ll be replaced by Brad McDonald, who has worked at Alain Ducasse at the Essex House, Per Se, and Noma.
Christopher Rendell has taken over the kitchens at both Mary Queen of Scots and Highlands. The chef, formerly of Double Crown and Public, is joined by another Double Crown alum, Ryan Butler. [Eater]
Marcus Samuelsson’s Red Rooster has a new executive chef. Michael Garrett is taking over from opening chef Andrea Bergquist.
Waldy Malouf of Beacon and on-the-side project Waldy’s Wood Fired Pizza is no longer in the kitchen at the latter, although his name will continue to be used.
