Like Gene Simmons’s Tongue? Then Check Out Gabrielle Hamilton’s at Prune, Dish No. 16


You may remember the long long tongue of frontman Gene Simmons of Kiss — who has since become a slatternly reality-show star. Rumors at the time suggested that he had had a cow tongue grafted onto his own. But take a minute to examine the splendid cow tongue currently being offered at Prune, and you’ll laugh at that schoolboy assertion.

For you see, a cow tongue is way bigger and thicker than Simmons’s tongue could ever be, and here you see Hamilton’s, nicely cross-hatched from the grill, and so tender you can almost lay the fork on top of it, and it will cut the tongue automatically, without you even moving a muscle. Well, not really, but it is mega-tender.

It comes with a simple salad of croutons and flat-leaf parsley, and there’s no better tongue to be had in the East Village. Get it at Hamilton’s celebrated restaurant Prune, where the staff of Fork in the Road recently said goodbye to our longtime full-time blogger Rebecca Marx. We’ll miss you, Rebecca!
