Empellón Cocina in the East Village serves all sorts of smart antojitos that pair well with its kicking tequila cocktails. One of these is the tongue sopes dish, a trio of crispy little masa cups filled with refried beans and topped with cubes of tender pork tongue and a dash of the house salsa de arbol. The masa has a deep, sweet corn flavor and the generously seasoned beans and tongue add just the right amount of saltiness for a bar snack.
