Empellón Cocina’s Tongue Sopes

Empellón Cocina in the East Village serves all sorts of smart antojitos that pair well with its kicking tequila cocktails. One of these is the tongue sopes dish, a trio of crispy little masa cups filled with refried beans and topped with cubes of tender pork tongue and a dash of the house salsa de arbol. The masa has a deep, sweet corn flavor and the generously seasoned beans and tongue add just the right amount of saltiness for a bar snack. Each sope is almost too easy to eat without spilling beans down your shirt — it’s gone in two bites. Empellón Cocina (105 First Avenue, 212-227-3099)
