The buzz: There are so many exceptional cocktails at Empellón Cocina — almost every margarita on the menu is worth trying — but none is as striking on first smell as the Charrería. Seriously, you know when someone has ordered this cocktail on the other side of the bar — it’s intensely redolent of oregano, giving off an herbal aroma that’s clean and inviting. The oregano flavor slightly overwhelms the first couple of sips, but the drink gets better as your senses adjust to it and you start to taste the earthy notes in the tequila, which is aged for eight months in white oak barrels. By the time you get halfway down the tall glass, the drink has mellowed out enough to be a convincing accompaniment to the pistachio-studded guacamole, a bar snack not to be missed here.
