The buzz: King’s Ramos gin fizz is made using a reverse technique: Instead of topping the drink with soda to create the signature fizz, the bartender starts with the soda in a tall glass, and slowly pours the rest of the ingredients, shaken for 30 seconds with ice, over it. The mixture rises and foams in the glass until it reaches the top with a firm, frothy head — to great dramatic effect. The result: the lightest, driest gin fizz around that’s not very sweet or overwhelmingly blasted with citrus. Flavorwise, it’s a demure version of the classic New Orleans libation. But the lively textures of the original — creaminess, effervescence — are still delightfully present.
