This week, I reviewed Prima in the East Village, a small seafood bar that offers coffee and pastries during the day. It’s run by Hamid Rashidzada and Greg Seider (who you might know from Summit Bar) and Frenchman David Malbequi is the chef.
Those are the whelks, above, ugly sea snails hiding in their shells. They’re poached until they’re no longer chewy, just a bit bouncy, and served simply with mayonnaise and lemon.
