Beet Gazpacho with Shrimp and Pistachios
2 red beets, boiled
4 plum tomatoes
1 red pepper
1 garlic clove
2 tablespoons of sherry vinegar
10 tablespoons of olive oil
8 shrimp, cooked
1 blood orange, sliced into 8 segments
Zest of 1 lime
¼ cup toasted pistachios
Puree the beets, tomatoes, cucumber, red pepper and garlic clove in a blender.
Mix in vinegar, olive oil and sea salt to taste
Divide into 8 bowls.
Place one shrimp in each bowl. Garnish with orange slice, lime zest, and toasted pistachios.
Add fresh pepper to taste.
