Escarole “Caesar Style” ($8 as dinner side; $12 as lunch main)
Escarole from Satur Farms gets the Caesar-salad treatment at Joe Isidori’s new Italian spot in Carroll Gardens, Arthur on Smith. The leaves are crunchy, in a pleasingly fatty dressing, with slivers of cured sardine, soft and sweet like fish jerky. The egg is barely cooked, so the yolk runs wildly into the greens once you pierce it with your fork, and there are dressing-soaked croutons, ideal for cleaning up the plate.
