Cheeseburger and Fries ($18)

Behold the bistro’s cheeseburger: a fat, rare patty of chuck, cheeks, and ribs, topped with lettuce, tomato, and finely sliced red onion. The meat is slathered with a bit of sharp Bearnaise–an emulsified butter sauce, chunky with tarragon and shallots–and a side of the sauce will also arrive in a teeny saucepan. Fries are thin and crisp, presented in a napkin tucked inside a cake ring. Ouf, the whole thing is a bit over the top! But every now and then you should sit down somewhere pretty, order a glass of wine, and seriously enjoy a burger, right?
