Summer Squash $12
Red Hook’s Fort Defiance has a new chef: Steve Linares, previously at Berlyn and Dumont, has recently changed over a lot of the menu (but kindly left the deviled eggs and pickled herring intact). This new dish is a simple one, and shows off some beautiful summer squash. It’s dabbed all over with a minty pesto and fluffy buttons of ricotta, which is all the vegetables need to shine right now. A cold, fizzy Collins ($8) makes an ideal companion.
