Kinuta is a maki roll utilizing cucumber instead of nori. Saba is mackerel, in this case pickled mackerel, which has a sweetish, vinegary taste. Put the two in a roll, dribble on some ginger dressing and toss in a red pickled plum that looks like a kid’s ball, and you have the saba kinuta found at Miyagi.
Miyagi is a long-running Japanese restaurant obscurely located on West 13th Street, named after a prefecture on Honshu Island.
