Fordham has been getting a lot of bad press for its nasty cafeteria food. We’re not sure if a gluten-free menu is going to help or hurt its reputation, but it’s launching one anyway.
The station offers gluten-free grains such as quinoa, brown rice, wild rice, buckwheat, millet, and teff.
Gluten-free meals are prepared to order. Students choose their preferred grain and add to it a variety of seasonal fresh vegetables such as asparagus, roasted peppers, corn, peas, and carrots.
Dressings are homemade and include ginger, fat-free sun-dried tomato, and Asian.
From a spokesperson: “This is every day at the dedicated vegan and gluten-free station in the marketplace at the Rose Hill campus — all locations have some form of gluten-free offerings, and most have vegan options — all have vegetarian in varying degrees of quantity.”
For the sake of the students, we can only hope this new gluten-free menu tastes better than the regular one.
