Here the holiday calls for a bread and muffin basket, lamb-sausage ragu with a soft poached egg and homemade pappardelle, porchetta with apple mostarda and salsa verde, and traditional Italian Easter cookies for $30 a person. Newly opened Clarkson on Varick Street will offer a holiday dinner menu for $45.
