No. 94: Salted caramel “impossible” flan from ABC Cocina
We’ve traversed through several notable dishes at ABC Cocina, the pan-Latin restaurant Jean-Georges Vongerichten and Dan Kluger opened in Flatiron just over a month ago, and while we’re appreciative of the intense care and seasonal produce that goes into each bright, fresh item on the dinner menu, it was a dessert that really stole our hearts. The salted caramel “impossible” flan has none of the gelatinous, rubbery texture that often plagues this Mexican dessert. Rather, the custard is, as the name suggests, impossibly smooth, nearly as velvety as mousse. It’s imbued with a healthy shot of real vanilla, which is matched to the flavor of salted caramel, instilled in the body of the dessert and pooled seductively on the plate, adding sultry depth to the sweet. Actual salt crystals sprinkled over the top impart a subtly crunchy texture, too. And it eats lightly, which means that you’ll definitely have room for it in your dessert stomach, even after you’ve enjoyed a multi-course feast.
