By 10:30 a.m. Saturday, nearly two hundred rain boot- and poncho-clad people had formed a queue winding through Smorgasburg in Williamsburg, hungrily awaiting the unveiling of the Shoyu Ramen Burger, which hit the blogosphere with cronut-like force last week. Creator Keizo Shimamoto and his team had promised they’d have enough ingredients for just 100 sandwiches (they came equipped to construct 150 in the end), so the burgers were sold out before Smorgasburg officially opened at 11 a.m. “It’s movie opening night mentality,” explained one customer in line. “If it’s a good movie and you want to see it, you’ve gotta get to the theater early.”
Shimamoto’s masterpiece is a shoyu-secret-sauce-glazed beef patty on a bed of arugula, which is crowned with scallions and sandwiched between two Sun Noodle ramen “buns” that are pan-fried to order. The burgers are served in a PleatPak, which is a drip-proof pleated wrapper that coils itself around the sandwich, opening like a snapdragon when you’re ready to take a bite.
