We caught up with chef Jose Ramirez-Ruiz a couple of months back, who gave us the skinny on his second summer of pig roasts at the Crown Victoria and the status of the twice-weekly vegetable-forward pop-up he runs with his girlfriend, Pam Yung. The pair has been serving multi-course dinners to small groups of diners at the Whirlybird Cafe since they departed from Isa last year, and they’ve amassed a loyal following that continues to grow.
So we’re not surprised that they’ve expanded into a bigger space: Word comes that the duo is moving the Tuesday and Thursday night pop-up, which is called Chez Jose, to the space that was once Lake Trout in South Williamsburg.

We have moved to a space on the south side of Williamsburg (Lake Trout), and are super stoked – more seating capacity, more legroom, and an actual kitchen to cook in! There’s also potential for some interesting projects in the future, which we will keep you informed of as they come to fruition…
The Chez Jose pop-up happens every Tuesday and Thursday at 7 and 9:15 p.m. Make reservations via firstname.lastname@example.org.
